The Perfect Chia Pudding Ratio: 3 Tbsp to 3/4 Cup, Every Time
If your first batch of chia pudding came out like soup โ or worse, like glue โ the recipe probably wasn’t the problem. The ratio was. Chia pudding is one of those rare kitchen formulas where a single measurement decides everything: get the ratio right and you get a creamy, spoonable pudding that sets the same way every single time. Get it wrong by even a tablespoon, and no amount of chilling will save it.
After testing batch after batch, we landed on the ratio we now use as the base of every recipe we publish. Here it is, plus why it works and how to adjust it to your taste.
The ratio: 3 tablespoons chia to 3/4 cup milk
Our Perfect Base Formula is:
3 tbsp chia seeds + 3/4 cup milk + 1 tbsp sweetener + 1 tsp vanilla + pinch of salt
That is a seed-to-liquid ratio of roughly 1:4 by volume. It produces a pudding that is thick enough to hold a spoon upright for a second, but still soft and creamy rather than rubbery. The sweetener, vanilla, and salt are flavor, not structure โ the seeds and milk do all the structural work.
Why this ratio works
Chia seeds absorb many times their weight in liquid, forming a gel coating around each seed โ that gel is the pudding. With too little liquid (say, 3 tablespoons of seeds in only 1/2 cup of milk), the seeds compete for moisture, set into a dense, dry mass, and some seeds stay crunchy in the middle. With too much liquid (1 cup or more), the gel is diluted and the result pours like a drink instead of spooning like a pudding. At 3/4 cup, every seed can fully hydrate with a little liquid left over to keep the texture silky.
Two technique details matter as much as the numbers. First, the double whisk: whisk when you combine, rest 10 minutes, then whisk again. The second whisk breaks up the clumps that cause the most common chia pudding mistakes. Second, time: the gel needs a minimum of 2 hours in the fridge, and overnight gives the fullest set.

The base ratio is a starting point, not a law. Once you have made it once, tune it:
- Thicker, parfait-style: keep 3 tbsp seeds and drop the milk to 2/3 cup, or add a 4th tablespoon of chia. Great for layering with fruit and granola.
- Lighter, softer set: raise the milk to a scant 1 cup. The result is closer to a creamy porridge โ lovely with warm toppings.
- Extra creamy: swap part of the milk for Greek yogurt or use canned coconut milk, keeping the total liquid at 3/4 cup.
- With mix-ins that absorb liquid (cocoa powder, protein powder, oats): add an extra splash of milk, about 1โ2 tablespoons, to compensate.
Scaling the ratio for meal prep
The ratio multiplies cleanly, which is what makes chia pudding meal prep so easy. A double batch is 6 tablespoons of chia to 1 1/2 cups of milk; a five-jar weekday batch is 15 tablespoons (just under 1 cup) of chia to 3 3/4 cups of milk. Mix one big bowl, divide into jars, flavor each jar differently, and breakfast for the week is done in about 15 minutes. Stored properly, those jars keep for 4 to 5 days in the fridge.
Quick tip: weigh once, relax forever. 3 tablespoons of chia seeds is about 36 grams. If you make pudding weekly, a kitchen scale turns the formula into a 10-second habit.
Troubleshooting by texture
Too runny after chilling? Stir in 1 more teaspoon of chia, whisk, and give it another hour. Too thick? Loosen with a splash of milk and a good stir โ the gel takes it happily. Lumpy? You likely skipped the second whisk; whisk hard now and it will mostly recover. For the full rescue guide, see our post on 7 mistakes that make chia pudding lumpy.
