3 tbsp chia seeds + 3/4 cup milk + 1 tbsp sweetener + 1 tsp vanilla + pinch of salt
Combine everything in a jar or bowl and whisk vigorously for 30 seconds so no dry pockets of seeds remain.
Let it sit on the counter. The seeds start absorbing liquid and forming their gel β this pause is the secret step most recipes skip.
Whisk a second time to break up any clumps. This double-whisk method is how you get a smooth, even set β never lumpy.
Cover and refrigerate at least 2 hours, or overnight for the thickest texture. Keeps 4β5 days in the fridge.

Meal Prep
One Sunday batch, seven different breakfasts. A simple plan with flavors, storage rules, and a shopping list.
Troubleshooting
Lumpy, runny, or bland? These seven fixes rescue almost any batch β including the one already in your fridge.
The questions we hear most β answered the same way we answer them in the eBook.
3 tablespoons of chia seeds to 3/4 cup of milk. Add 1 tablespoon of sweetener, 1 teaspoon of vanilla, and a pinch of salt. Whisk well, rest 10 minutes, whisk again, then chill for at least 2 hours or overnight.
Stored in a sealed jar or airtight container, chia pudding keeps for 4-5 days in the fridge. That is what makes it ideal for meal prep: make a batch on Sunday and breakfast is covered most of the week. Give it a quick stir before eating, and trust your nose β if it smells sour, toss it.
Lumps happen when dry chia seeds clump together before they can absorb liquid evenly. The fix is the double whisk: whisk vigorously as soon as you combine the ingredients, let the mixture rest for 10 minutes, then whisk again to break up any gel pockets before chilling.
Almost any milk works. Dairy milk gives the creamiest result, canned coconut milk makes it rich and dessert-like, and almond or oat milk keep it light. Just keep the same 3/4 cup measurement, whatever you choose.
Honey and maple syrup are the easiest 1:1 swaps for sugar. You can also use mashed banana, applesauce, or a few drops of liquid stevia β start with a little, taste after chilling, and adjust, because cold dulls sweetness slightly.
Yes β chia pudding is designed for it. It needs a minimum of 2 hours to set properly, but overnight (about 8 hours) gives the thickest, creamiest texture. Mix it in the evening and it is ready to grab in the morning.
